
Ernani Roastery inaugurated its Academy in 2020: a place to discover coffee in 360°, along the entire supply chain, and to truly become passionate about this extraordinary world.
Why did we create the Ernani Academy?
The reasons were multiple:
- The strong desire to share with all enthusiasts what we have studied, learned and experimented over the years;
- The need to train Ernani baristas and customers, to guarantee constant and conscious quality in every cup;
- The goal is to make training accessible to everyone, without financial limits or barriers to entry.
Research and training are the basis for growth.
This is how Ernani Academy was born: a concrete tool to improve the supply chain and transmit knowledge and passion.
Available courses
The courses are designed for both professionals and enthusiasts: you don’t need to be an expert, you just need to be curious and want to get involved.
Each course also includes a practical part, to truly experience coffee.
At Ernani Academy we have developed 7 courses:
1. Green coffee

The course to get to know raw coffee in depth: from birth to processing, up to its marketing.

4. From single origins to blends

To understand how different single origins influence the aroma and final profile of a blend.

How to book and activate a course
- All courses are held at our headquarters in Desio (MB), in via Don Luigi Sturzo 19, from Monday to Saturday.
- There is no fixed calendar: you choose the day, based on your commitments. The only condition is that there are at least 3 participants to activate the course. If there are already 3 of you, the course starts immediately, if you are alone, we will put you on the waiting list and contact you when the minimum number is reached.
- Each course is independent, so you can take part in just one or more modules. In fact, all of them include an introduction that allows you to follow without difficulty, or without previous training.
However, if you wish to complete the entire course and obtain our “Master in Coffee” certificate, we recommend that you follow the courses in the order indicated.
Our aim
In Italy and around the world there are many coffee schools. We too have trained at highly respected national institutions. However, one thing has always struck us: professional training in the sector is often too elitist.

one of the most critical points of our sector is the little, if any, training of professionals.
Importers who treat coffee only as a financial asset, roasters who work without awareness, commercial agents focused only on the price and loan for use and/or financing services, baristas who do not know how to extract an espresso correctly…
In an industry where margins are slim and salaries are low, how can you ask a barista to invest thousands of euros in training?
We understand the economic difficulties, but also the urgency to change things.
This is why we have chosen to reduce costs, for example by training internally and offering courses at affordable prices, with the aim of spreading knowledge, stimulating research and making coffee a truly shared culture.
