Meet Blue Diamond: story and extraction!


The historic torrefazione in Corso Buenos Aires was opened in 1909 and since then it has always delighted its customers with amazing coffees and surprising aromas, including the very famous Blue Diamond.

Paolo, the head roaster of Caffè Ernani had an incredible responsibility in creating all the blends: he had to satisfy the sophisticated tastes of the customers of the Milanese cafè.

When he conceived the Blue Diamond blend, the goal was to obtain a high quality coffee, composed only of fine Arabica, able to accompany you around the world with a single cup of coffee.

In fact, the beans come from the most disparate parts of the earth: Ethiopia, India, Central and South America.

Not to mention the processing, with washed, semi-washed and natural coffees.

Each will bring with them the distinctive characteristics of him, that is, the merits of their region of origin and the processing method used.

Sensory description

The Blue therefore has a great aromatic range, with an acidity linked to hints of lemon and pink grapefruit, balanced by a good sweetness thanks to the notes of white chocolate, honey and vanilla. The bitterness, on the other hand, is light and delicate and brings with it a pleasant toasted aftertaste.

All this makes it a complex and particular coffee, but at the same time, fresh and delicate, able to remain imprinted on the palate for a long time and even more in the memory.

It is also surprising how with each taste different fragrances are discovered from time to time that will make you fall in love with it more and more.

Furthermore, being a 100% Arabica it has a reduced caffeine content, compared to the other Caffè Ernani blends. It is therefore perfect to savor in the afternoon, calmly, paying the right attention, perhaps combining it with lemon or vanilla biscuits.

The Blue Diamond is therefore suitable for you if you are looking for a fine, delicate and fresh coffee, with a wide range of aromas and a low caffeine content.

Medium Roasting

Everything is then enhanced by the Medium Roasting, Ernani's distinctive signature on all its products, carried out separately for each single origin. In fact, the coffees are assembled only after roasting to form the blend that we all know!

This type of roasting maximizes all the natural aromas and qualities of raw coffee, extracting only the best from each bean.

Finally, it never makes the coffee excessively bitter, therefore perfect to be enjoyed even without sugar!

Extraction methods

Now let's consider the four possible macro extractions, analyzing them specifically:

  • Expressed
  • Moka
  • Paper filter with V60
  • Capsule

Italian espresso 

We certainly recommend a dose of 8.5 grams per person in espresso. In this way we are able to obtain a good body and a velvety cream, despite being a 100% Arabica.

Blue Diamond in espresso is a coffee with a thousand facets: it manages to best express its wide aromatic range and its intensity.

The acidity is well present, but very pleasant, moreover to be a blend of Arabica only, as we have already said, on the palate it expresses a good body. Bitterness, on the other hand, is almost absent.

Finally it is very persistent over time; in fact, even after 10-15 minutes an excellent fragrance remains in the mouth.

Paper filter - V60

Even with filter extractions it performs very well.

In this case, however, the bitterness is completely eliminated and all those fresh scents of flowers, fruit and citrus fruits are skipped.

In this case, in addition to acidity, the main feature is the sweetness of chocolate and vanilla.

It is a drink that is almost more like a tea than a coffee and overall it is a delicate coffee.


In moka, on the contrary, it does not make all its fragrances to the maximum.

With this extraction method its aromatic range is reduced, mainly perceiving only chocolate and nuts.

However, it is suitable for those looking for a little more bitterness than the previous two methods.


In this case we are talking about capsules compatible with the Nespresso extraction system.

The result is a light and full-bodied fragrant coffee, with an excellent aromatic range.
