It’s time to learn all about Armonia: its composition, characteristics, taste, and many tips for espresso, mocha, filter, and capsule extraction!
Paul, as Ernani’s chief roaster, was looking for a new blend after the creation of Blue Diamond, Allegro, and Vivace that could express sweetness without bitterness and acidity.
Although the fresh acidities typical of Arabica coffees are a great asset, and we all at Caffè Ernani appreciate them, we also understand that a person, accustomed to drinking dark-roasted, mainly bitter coffee, might be bothered by the acidity.
That’s why Paul decided to create a kind of “entry level” blend: balanced, mostly sweet and with an intense aroma. In this way, anyone tasting a fine Medium Roast coffee for the first time will be able to appreciate it to the fullest and understand the enormous differences from a Dark Roast coffee.
Being sweet, it is also perfect for those who are trying to eliminate the sugar packet from their coffee!
Drinking unsweetened coffee is the only possible way to taste it fully and be able to enjoy all its aromatic nuances: sugar alters the true taste of coffee!
For this reason, the selection of raw coffees was focused on a natural arabica coffee that would bring sweetness to the cup while being overall smooth and enveloping.
Then combining it with always natural robusta coffees that would not carry excessive bitterness, but attribute good body and intensity.
Thus the Brazilian Arabica Santos Cerrado Bom Chocolate was chosen, along with robustas from Central Africa.
Sensory description
The taste is perfectly balanced between sweetness, acidity and bitterness. Overall, it is a blend that does not have a broad flavor spectrum, but the aromas present are well-defined and persistent over time: cocoa, caramel, and nuts.
The body is enveloping and round.
It is perfect both for a breakfast, great in fact with milk, and for an afternoon snack.
Harmony is therefore suitable for you if you are looking for a balanced, intense and creamy blend and especially if you want to try drinking sugar-free coffee for the first time!
Medium Toast
This is then enhanced by the Medium Toasting, Ernani’s distinctive signature on all its products, carried out separately for each single-origin.
In fact, coffees are assembled only after roasting!
Medium Roasting maximizes all the natural flavors and merits of raw coffee, extracting only the best from each bean.
Finally, it never makes the coffee overly bitter, so it is perfect to enjoy even without sugar!
Methods of extraction
Here are tips on the four possible macro draws:
- Espresso
- Mocha
- Paper filter
- Capsules
I anticipate that Harmony coffee does best in espresso, mocha, and capsules.
Espresso
Extracted in espresso we recommend a dose of 7.5/8gr. per person to achieve an intense, creamy and above all fragrant cup.
Already on the nose, a distinct cocoa and roasted aroma can be perceived, which is then found on tasting.
The acidity in this case is almost absent, while sweetness and bitterness are well balanced.
Overall it is a good coffee, smooth, enveloping and easy to drink without sugar.
Mocha
Now with mocha: there is an intense cocoa and roasted aroma on the nose.
But, with this extraction method, slightly more bitterness is enhanced.
A lingering hint of bitter cocoa remains in the aftertaste.
Paper filter
If extracted in a filter, on the other hand, an intense aroma of chocolate is immediately perceived on the nose.
For being a blend and not a single-origin, in filter it is a good coffee, in which the sweetness is brought out to the fullest, it almost seems as if there is honey or caramel in it. The cocoa taste is less intense than in espresso.
The bitterness and acidity are hardly noticeable.
Capsules
In capsule, in our case Nespresso compatible, the sweetness is enhanced even more than in mocha and espresso, making you forget about more acidic or bitter notes.
The supreme hint that can be sensed is that of dark chocolate.
