The historic roastery on Corso Buenos Aires was opened in 1909 and has been delighting its customers ever since with amazing coffees and surprising aromas, including the world-famous Blue Diamond.
Paolo, the roaster at Caffè Ernani, therefore had an incredible responsibility when creating all the blends: he had to satisfy the sophisticated tastes of the roasting company’s customers in Milan.
When he came up with the Blue Diamond blend The goal was to obtain a high-quality coffee composed of only the finest Arabica beans , capable of accompanying you around the world with a single cup of coffee.
In fact, the grains come from the most diverse parts of the earth-Ethiopia, India, Central and South America.
Not to mention the processing, with washed, semi-washed and natural coffees.
Each will bring with it its own distinctive characteristics, namely the merits of its region of origin and the processing method used.

Sensory description
The Blue thus has a great aromatic range, with acidity linked to hints of lemon and pink grapefruit, balanced by good sweetness from notes of white chocolate, honey and vanilla. In contrast, the bitterness is light and delicate and carries a pleasant roasted aftertaste.
All this makes it a complex and distinctive coffee, but at the same time, fresh and delicate, able to remain imprinted on the palate for a long time and even longer in the memory.
It is amazing then how with each taste you discover different scents time after time that will make you fall in love with it more and more.
Also being a 100% Arabica it has a reduced caffeine content, compared to other Ernani Coffee blends. It is therefore perfect to savor in the afternoon, quietly, giving it proper attention, perhaps pairing it with lemon or vanilla cookies.
Blue Diamond is therefore suitable for you if you are looking for a fine, mild and fresh coffee with a wide aromatic range and a reduced caffeine content.
Medium Toast
This is then enhanced by Medium Roasting, Ernani’s distinctive signature on all its products, carried out separately for each single-origin. In fact, the coffees are assembled only after roasting to form the blend we all know!
This type of roasting maximizes all the natural aromas and merits of raw coffee, extracting only the best from each bean.
Finally, it never makes the coffee overly bitter, so it is perfect to enjoy even without sugar!
Methods of extraction
Now let us consider the four possible macro extractions, analyzing them specifically:
- Espresso
- Mocha
- Paper filter with V60
- Capsule
Espresso
Definitely in espresso we recommend a dose of 8.5 g per person. In this way we are able to achieve good body and a velvety cream, despite being a 100% Arabica.
Blue Diamond in espresso is a multifaceted coffee: indeed, it succeeds in expressing its wide aromatic range and intensity to the fullest.
The acidity is well present, but very pleasant, plus for being an Arabica-only blend, as we have already mentioned, it expresses good body on the palate. In contrast, bitterness is almost absent.
To top it off, it is very persistent over time; in fact, even after 10-15 minutes, a very good fragrance remains in the mouth.
Paper filter – V60
Even with filter extractions it renders very well.
In this case, however, the bitterness is completely zeroed out and all those fresh scents of flowers, fruits and citrus are skipped.
In this case, what takes center stage besides acidity is the sweetness of chocolate and vanilla.
It is almost more like a tea drink than a coffee, and overall it is a mild coffee.
Mocha
In mocha on the contrary, it does not make the most of all its fragrances.
With this extraction method, its aromatic range is reduced by perceiving mainly only chocolate and nuts.
It is, however, suitable for those seeking an extra edge of bitterness than the previous two methods.
Capsules
In this case we are talking about capsules compatible with the Nespresso extraction system.
It results in a light-bodied fragrant coffee with an excellent aromatic range.
